Salad of boiled eggs, red onions and green beans

Ingredients for 4 people
  • 400 g green beans
  • 1 red onion
  • 3 eggs
  • balsamic vinegar
  • extra virgin olive oil
  • salt and pepper
Preparation
  • Wash the green beans under water, top and tail them and boil them in plenty of lightly salted for about 15 minutes, depending on their thickness.
  • Put the eggs in a saucepan with cold water and boil them, calculating 7-8 minutes of cooking time after the water has boiled.
  • Remove them and set them aside to cool, then shell them.
  • As soon as the beans are cooked, drain them, cut them into small pieces and let them cool in a salad bowl.

  • Add the eggs to the green beans, chopping them roughly into small pieces.

  • Peel the onion and slice it finely with a mandolin slicer, then add them to the salad bowl.

  • Season with a little oil, a pinch of salt, pepper and balsamic vinegar and serve.
