They are excellent consumed raw and ideal cooked as light accompanying side dishes. They can be boiled, steamed, grilled and fried with their flowers. In first courses, they are used in vegetable soups, pasta and risotto dishes. They are even perfect thinly sliced on pizza, or as an ingredient in omelettes.
