Long aubergines

The shape of these aubergines is well suited for making rolls. They have an elastic consistency and the slices can be wrapped around themselves or a filling without breaking. They are also perfect fried in boiling oil: they tolerate high temperatures and when cooked they guarantee excellent flavour and a good texture.
