Gazpacho

Ingredients for 4 people
- 1 kg ripe tomatoes
- 1/2 white onion
- 1 green pepper
- 1 cucumber
- 3 tablespoons red wine vinegar
- 1/2 tablespoon salt
- 200 g extra virgin olive oil
- 1/2 stale bread roll
Preparation
- Wash the tomatoes and slice them.
- Peel the garlic and onion and cut the onion into quarters.
- Wash the pepper, slice it and remove the seeds.
- Peel the cucumber and taste it to check it is not bitter.
- Soften the roll by dipping it in water and squeezing it as much as possible.
- Blend all the ingredients until a mixture with a creamy consistency is obtained.
- Let the gazpacho chill in the fridge before serving it as a first course.
