Gazpacho

Ingredients for 4 people
  • 1 kg ripe tomatoes
  • 1/2 white onion
  • 1 green pepper
  • 1 cucumber
  • 3 tablespoons red wine vinegar
  • 1/2 tablespoon salt
  • 200 g extra virgin olive oil
  • 1/2 stale bread roll
Preparation
  • Wash the tomatoes and slice them.
  • Peel the garlic and onion and cut the onion into quarters.
  • Wash the pepper, slice it and remove the seeds.
  • Peel the cucumber and taste it to check it is not bitter.
  • Soften the roll by dipping it in water and squeezing it as much as possible.
  • Blend all the ingredients until a mixture with a creamy consistency is obtained.
  • Let the gazpacho chill in the fridge before serving it as a first course.
