Vegetarian quiche with red peppers and courgettes
Ingredients for 4 people
- 1 package of puff/flaky pastry
- 2 red peppers
- 2 round courgettes
- 200 ml cream
- 3 eggs
- 50 g cheese
- 1 yellow onion
- marjoram
- salt & pepper
Preparation
- Roll out the pastry and lay it out in a quiche tin.
- Clean the peppers, cut them into small pieces and sauté in a pan with a little olive oil and onion.
- Follow the same instructions for the courgettes.
- Put the vegetables in a bowl, add the cheese cut into strips, the cream and the eggs, then season with salt, pepper and marjoram.
- Mix everything well, then pour the mixture into the tin lined with the pastry.
- Bake in a hot oven at 180°C for about 30 minutes.
- The pepper and courgette quiche is lovely served hot, but equally tasty served cold the next day!
