Vegetarian quiche with red peppers and courgettes

Ingredients for 4 people
  • 1 package of puff/flaky pastry
  • 2 red peppers
  • 2 round courgettes
  • 200 ml cream
  • 3 eggs
  • 50 g cheese
  • 1 yellow onion
  • marjoram
  • salt & pepper
  • Roll out the pastry and lay it out in a quiche tin.
  • Clean the peppers, cut them into small pieces and sauté in a pan with a little olive oil and onion.
  • Follow the same instructions for the courgettes.
  • Put the vegetables in a bowl, add the cheese cut into strips, the cream and the eggs, then season with salt, pepper and marjoram.
  • Mix everything well, then pour the mixture into the tin lined with the pastry.
  • Bake in a hot oven at 180°C for about 30 minutes.
  • The pepper and courgette quiche is lovely served hot, but equally tasty served cold the next day!
