Chicken salad with tomatoes, sweet onion and chives

Ingredients for 4 people
  • 200 g roast chicken
  • 1/2 sweet onion
  • 10 cherry tomatoes
  • chives
  • extra virgin olive oil
  • salt and pepper
Preparation
  • Bone the roast chicken (leftover chicken can also be used), cut it into chunks and transfer it to a salad bowl.
  • Add the chopped tomatoes, the thinly-sliced onion and dress with extra virgin olive oil, salt, pepper and chives.
  • If you like, add a teaspoon of mayonnaise.
