Spicy white onion bahji fritters

Ingredients for 4 people
  • 2 large white onions
  • 200 g chickpea flour
  • 2 teaspoons baking powder
  • ground cumin, coriander, chilli pepper
  • 1/2 lemon
  • 1 L vegetable oil (eg. peanut, sunflower, etc)
  • paprika
  • salt
Preparation
  • Thinly slice the onions.
  • In a large bowl, mix the chickpea flour, baking powder and a pinch of each spice (cumin, coriander, chilli pepper).
  • Add enough water to form a batter, add the lemon juice and salt.
  • Put the onion slices in the batter and stir well opening the rings so that they are all well covered in batter.
  • Heat the oil in a deep pan. Take spoonfuls of the mixture and place carefully into boiling oil. Fry a few fritters at a time to prevent them sticking to each other.
  • When the fritters are golden, lift them out with a draining spoon and place them on kitchen paper to absorb the excess oil.
  • Serve hot with a sprinkling of salt and paprika.
