Spicy white onion bahji fritters
Ingredients for 4 people
- 2 large white onions
- 200 g chickpea flour
- 2 teaspoons baking powder
- ground cumin, coriander, chilli pepper
- 1/2 lemon
- 1 L vegetable oil (eg. peanut, sunflower, etc)
- paprika
- salt
Preparation
- Thinly slice the onions.
- In a large bowl, mix the chickpea flour, baking powder and a pinch of each spice (cumin, coriander, chilli pepper).
- Add enough water to form a batter, add the lemon juice and salt.
- Put the onion slices in the batter and stir well opening the rings so that they are all well covered in batter.
- Heat the oil in a deep pan. Take spoonfuls of the mixture and place carefully into boiling oil. Fry a few fritters at a time to prevent them sticking to each other.
- When the fritters are golden, lift them out with a draining spoon and place them on kitchen paper to absorb the excess oil.
- Serve hot with a sprinkling of salt and paprika.
