Rainbow salad

Ingredients for 2 people
  • 3 round medium courgettes
  • basil leaves
  • 200 g Pachino tomatoes
  • 1 firm pear
  • 1 yellow pepper
  • 2 spring onions
  • bean sprouts
  • extra virgin olive oil
  • sesame seeds (1 tablespoon)
Preparation
  • Wash and dry all the vegetables.
  • Cut the courgettes into matchstick-size pieces, peel and chop the pear, and chop the tomatoes, pepper and the spring onion into small slices.
  • Combine all the vegetables in a large bowl adding the bean sprouts. Season with extra virgin olive oil, sesame seeds and hand-torn fresh basil leaves.
