Rainbow salad
Ingredients for 2 people
- 3 round medium courgettes
- basil leaves
- 200 g Pachino tomatoes
- 1 firm pear
- 1 yellow pepper
- 2 spring onions
- bean sprouts
- extra virgin olive oil
- sesame seeds (1 tablespoon)
Preparation
- Wash and dry all the vegetables.
- Cut the courgettes into matchstick-size pieces, peel and chop the pear, and chop the tomatoes, pepper and the spring onion into small slices.
- Combine all the vegetables in a large bowl adding the bean sprouts. Season with extra virgin olive oil, sesame seeds and hand-torn fresh basil leaves.
