Pasta with radicchio, red onion and walnuts

Ingredients for 4 people
  • 400 g pasta quills (penne)
  • 2 heads of radicchio
  • 2 red onions
  • 70 g shelled walnuts
  • rosemary
  • extra virgin olive oil
Preparation
  • Clean the radicchio and cut into strips.
  • Peel the onions and slice them into rounds.
  • Heat a tablespoon of olive oil in a large sauté pan and add the onion.
  • Add the radicchio and the sprig of rosemary and allow to cook over a moderate heat.
  • Season with salt and pepper and cook for a few minutes.
  • Meanwhile, cook the penne until al dente (still firm) in plenty of salted water.
  • Drain the pasta and stir it into the pan with the radicchio and onions, adding a ladle of the pasta cooking water and the chopped walnuts.
