Pasta with radicchio, red onion and walnuts

Ingredients for 4 people
- 400 g pasta quills (penne)
- 2 heads of radicchio
- 2 red onions
- 70 g shelled walnuts
- rosemary
- extra virgin olive oil
Preparation
- Clean the radicchio and cut into strips.
- Peel the onions and slice them into rounds.
- Heat a tablespoon of olive oil in a large sauté pan and add the onion.
- Add the radicchio and the sprig of rosemary and allow to cook over a moderate heat.
- Season with salt and pepper and cook for a few minutes.
- Meanwhile, cook the penne until al dente (still firm) in plenty of salted water.
- Drain the pasta and stir it into the pan with the radicchio and onions, adding a ladle of the pasta cooking water and the chopped walnuts.
