Radicchio salad
with pomegranate and walnuts

Ingredients for 4 people
  • 1 head of radicchio
  • 60 g valerian lettuce leave
  • pomegranate seeds
  • 3 clementines
  • 75 g shelled walnuts, toasted and chopped
  • 50 g Grana Padano or Parmigiano cheese shavings
  • For the vinaigrette
  • 100 g extra virgin olive oil
  • 2 tablespoons clementine juice
  • 2 tablespoons lemon juice
  • grated zest of clementines
  • 1 shallot, finely chopped
  • salt and pepper
Preparation
  • Wash all the vegetables and slice the radicchio leaves.
  • Prepare the vinaigrette by whisking all the ingredients in a blender.
  • Pour the vegetables into a large bowl and season immediately with the clementine vinaigrette.
