Radicchio salad
with pomegranate and walnuts
Ingredients for 4 people
- 1 head of radicchio
- 60 g valerian lettuce leave
- pomegranate seeds
- 3 clementines
- 75 g shelled walnuts, toasted and chopped
- 50 g Grana Padano or Parmigiano cheese shavings
- For the vinaigrette
- 100 g extra virgin olive oil
- 2 tablespoons clementine juice
- 2 tablespoons lemon juice
- grated zest of clementines
- 1 shallot, finely chopped
- salt and pepper
Preparation
- Wash all the vegetables and slice the radicchio leaves.
- Prepare the vinaigrette by whisking all the ingredients in a blender.
- Pour the vegetables into a large bowl and season immediately with the clementine vinaigrette.
