Radicchio omelette sandwich

Ingredients for 4 people
  • 3 heads of radicchio
  • 8 eggs
  • 30 g Grana Padano or Parmigiano cheese, grated
  • 2 onions
  • 200 g of cured ham (prosciutto crudo)
  • 1 tablespoon of fresh cream
  • balsamic vinegar
Preparation
  • Mix together the finely chopped radicchio and onions.
  • Add salt and pepper and cook, keeping the pan covered for about ten minutes.
  • Add two tablespoons of balsamic vinegar and reduce (allow to evaporate).
  • Separately, beat the eggs with the cream, add salt to taste and add the radicchio.
  • Cook 8 small omelettes in a pan measuring 8-10 cm in diameter.
  • Combine them in pairs, filled with ham, to form sandwiches.
