Radicchio omelette sandwich

Ingredients for 4 people
- 3 heads of radicchio
- 8 eggs
- 30 g Grana Padano or Parmigiano cheese, grated
- 2 onions
- 200 g of cured ham (prosciutto crudo)
- 1 tablespoon of fresh cream
- balsamic vinegar
Preparation
- Mix together the finely chopped radicchio and onions.
- Add salt and pepper and cook, keeping the pan covered for about ten minutes.
- Add two tablespoons of balsamic vinegar and reduce (allow to evaporate).
- Separately, beat the eggs with the cream, add salt to taste and add the radicchio.
- Cook 8 small omelettes in a pan measuring 8-10 cm in diameter.
- Combine them in pairs, filled with ham, to form sandwiches.
