Savoury pancakes with radicchio and Monte Veronese cheese

Ingredients for 4 people
  • 3 eggs
  • 500 ml of milk
  • 250 g of flour
  • 3 heads of radicchio
  • 100 g Monte Veronese or other creamy, soft cheese
  • salt and pepper
  • 1 tablespoon Grana Padano (or Parmigiano) cheese, grated
  • butter
Preparation
  • Whisk the flour together with the milk, egg and salt.
  • Wash the radicchio leaves, cut into thin strips and cook for 10 minutes over a low heat in a little olive oil and a pinch of salt and pepper.
  • Add the Monte Veronese cheese, mixing well.
  • Grease a pan with oil, pour in two tablespoons of batter to cover the entire surface of the pan.
  • Cook for a couple of minutes and then turn onto the other side.
  • Once the pancakes are reasy, spread some filling on each one, fold it in half and then in half again and place it in an oiled baking dish.
  • Sprinkle the pancakes with the grated Grana or Parmigiano cheese and add a few knobs of butter.
  • Bake at 200°C or about 15 minutes.
