Pesto with radicchio

Ingredients for 4 people
  • 2 heads of radicchio
  • 50 g blanched almonds
  • extra virgin olive oil
Preparation
  • Wash the radicchio and cut the leaves into little strips.
  • Whisk in a blender adding extra virgin olive oil, and a pinch of salt and pepper.
  • Add the blanched almonds and continue to blend everything together.
  • Serve it on slices of hot bread or use as a sauce for pasta.
